BANANA KALE MUFFINS
Ingredients:
1 1/2 cups of oat flour
1 teaspoon Maca powder (optional)
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/3 cup baking stevia
1 teaspoon vanilla or almond extract
1/3 cup almond milk
1 large banana
4 tablespoons unsweetened applesauce
2 egg whites
3-4 kale leaves
Optional – you can add your favorite raw nut to the batter after blending to give it texture and an added crunch.
Directions:
Preheat oven to 350 degrees
Place kale, banana, almond milk into a food processor or blender and blend till smooth. Pour mixture into a bowl and add the remaining ingredients and blend together. Line or spray muffin pan with non-stick spray and pour mixture into the muffin tin filling each cup 2/3 of the way full.
Bake for approximately 15-18 minutes until a toothpick inserted into the muffin comes out clean.
