BLACK BEAN BROWNIES
Ingredients:
1 15 oz. can black beans, well rinsed and drained
1 egg white
2 large eggs
3 tbsp. coconut oil, melted (can also substitute oil with 3 tbsp. unsweetened applesauce)
1/4 cup cacao or cocoa powder
1 tbsp. raw maca powder (optional)
1/4 tsp. sea salt
1 tsp. pure vanilla extract
3/4 cup of baking stevia
1 tsp. baking powder
Optional toppings: walnuts and/or dark chocolate chips
Directions:
Preheat oven to 350 degrees
Lightly grease an 8×8 pan
Combine the above ingredients – black beans, eggs, coconut oil (or unsweetened applesauce if substituting), cacao, maca, salt, vanilla, stevia and baking powder into a food processor and blend until smooth.
Evenly distribute the batter into the 8×8 pan
Optional topping: Sprinkle walnuts and/or chocolate chips over the top or gently stir into the mixture
Bake for approximately 25-30 minutes or until the top is dry and the edges start to pull away from the sides. You can also test it by using a toothpick into the center and it comes out clean.
Remove from oven and let cool for 20 minutes. Cut into squares and gently remove them from the dish and enjoy. They’ll last longer if you store them in the refrigerator in an airtight container.
